Strawberry Nut Muffins

Ingredients

3/4 c. whole wheat flour
1/2 t. baking flour
1/2 t. cinnamon
1 egg
1 c. buttermilk
1 t. vanilla 3/4 c. all purpose flour
1/2 t. baking soda
1/2 c. chopped pecans
1/2 c. brown sugar, packed
1/4 c. corn oil
1 c. coarsely chopped strawberries

Directions

  1. Spray a muffin pan with non-stick spray, set aside.
  2. In a medium bowl, combine the flours, baking powder, baking soda, cinnamon and pecans.
  3. Mix well.
  4. In a large bowl, beat the egg lightly.
  5. Stir in the brown sugar, buttermilk, oil & vanilla. Blend well.
  6. Add the flour mixture and gently fold together until the dry ingredients are moistened.
  7. Gently fold in the strawberries. Fill muffin cups 3/4 full.
  8. Bake in a 375 degree oven for 20-25 minutes.
